Spaghetti Amatriciana

For 1

  • 1 portion fresh spaghetti pasta
  • 1 portion danspasta homemade tomato Sauce (1/2 jar)
  • 40g diced guanciale (a cured meat prepared from the pork jowl)
  • 30g shaved pecorino
  • danspasta chilli oil
step 1: drizzle a decent amount of chilli oil into your pan on medium to low heat until the pan is hot
step 2: saute diced guanciale until translucent
step 3: pour home made tomato sauce over the guanciale
step 4: tip your fresh spaghetti into a pot of salted boiling water, make sure you are liberal with the salt. cook for 2-3 minutes until al dente
step 5: season sauce with salt and pepper and shave in your pecorino cheese. pasta water can also be added to bind everything together. 
step 6: once the spaghetti is cooked, use tongs to add it to the sauce and toss until every strand of spaghetti is coated in the sauce. Serve!
