saffron malloreddus w/ creamy tomato & zucchini
A quick and simple dish that's fragrant, light and leaves you satisfied!
- 1 portion fresh saffron malloreddus
- 1 portion danspasta homemade tomato Sauce (1/2 jar)
- approximately half a green zucchini (diced)
- 1/4 brown onion (diced)
- 30g grated parmesan
- 1 tablespoon fresh or thickened cream
- danspasta garlic oil
- basil leaves for garnish
step 2: add your green zucchini, season with salt and pepper
step 3: tip your fresh saffron malloreddus into a pot of salted boiling water, make sure you are liberal with the salt. cook for 5-6 minutes until al dente
step 4: once the zucchini is soft and cooked through add your tomato sauce and stir through.
step 5: add your cooked pasta to the pan and then incorporate the cream and toss until it all comes together.
step 6: garnish with basil and grate over a generous fixing of parmesan, serve!
