Saffron Malloreddus w/ Creamy tomato & Zucchini

A quick and simple dish that's fragrant, light and leaves you satisfied! 

For 1

  • 1 portion fresh saffron malloreddus
  • 1 portion danspasta homemade tomato Sauce (1/2 jar)
  • approximately half a green zucchini (diced)
  • 1/4 brown onion (diced)
  • 30g grated parmesan
  • 1 tablespoon fresh or thickened cream
  • danspasta garlic oil
  • basil leaves for garnish

Step 1: Drizzle a decent amount of garlic oil into your pan on medium heat until the pan is hot and add onions. cook for a few minutes until translucent.
Step 2: Add your green zucchini, season with salt and pepper 
Step 3: Tip your fresh saffron malloreddus into a pot of salted boiling water, make sure you are liberal with the salt. cook for 5-6 minutes until al dente
Step 4: Once the zucchini is soft and cooked through add your tomato sauce and stir through. 
Step 5: Add your cooked pasta to the pan and then incorporate the cream and toss until it all comes together. 
Step 6: Garnish with basil and grate over a generous fixing of parmesan, serve!
