ravioli w/ leek broth and chives

For 1

  • 1 portion fresh ravioli 
  • 2 leeks (washed and roughly chopped)
  • 1L water
  • 1/2 sliced onion
  • 1 drizzle of garlic oil
  • 1 drizzle of olive oil
  • 1 handful of chopped chives
  • 1 squeeze of lemon
step 1: for the broth; add garlic oil to a pan on low to medium heat and toss in sliced onion. cook till translucent but not browned.
step 2: add leeks and cook for a few minutes. Cover with water and let simmer for 30 minutes. strain and season with salt and pepper
step 3: drop the ravioli into salted boiling water and cook for 2-3 minutes
step 4: once the ravioli is cooked, drain and add to strained leek broth. 
step 5: serve in a bowl, and finish with chives, a squeeze of lemon and drizzle of olive oil!
